Potato Skin Party Bites

The best part of this recipe is that you can make it ahead of time and just throw it all together 10 minutes before half time and it will be GAME ON!

Easy Baked Potato Skin Bites

  • Red skinned potatoes- sliced into 1/8" rounds
  • Fresh cooked bacon- cooked until crispy, cooled and crumbled
  • Sliced scallions
  • Ranch dressing
  • Colby Jack cheese – shredded
  • Olive Oil, Salt,Pepper
  1. Preheat oven to 400 degrees F

  2. Place potato rounds in a single layer on a parchment covered baking tray.

  3. Brush on olive oil using a basting brush.

  4. Sprinkle lightly with salt & pepper.

  5. Flip potato rounds and repeat oil, salt & pepper. 

  6. Bake potatoes for 25 minutes being careful not to burn the bottoms. (I like the bottom rack for this recipe.) 

  7. Flip potatoes, rotate baking sheet and bake for another 15 minutes until golden brown.

  8. Lower oven temp to 350 and arrange potatoes on an oven safe platter. 

  9. Top potatoes with shredded cheese and bacon crumbles. Place in oven for 3-4 minutes or until cheese is melted. 

  10. Garnish with scallions and finish with ranch dressing. Serve. 

  • You can use any good melting cheese you wish, but make sure to grate your own. Pre shredded cheeses don’t melt as well due to the additives.
  • Be careful when serving, the platter will be hot
